Whether you’re a new vegan or have been vegan a while, we all have those days when cooking seems like the last thing we want to think about. There are too many to list in just this post so you won’t be short of options in 2021.
We don’t all have the energy or time to cook our meals ourselves and it’s not realistic to expect that we won’t ever get a takeaway or lean on convenient ready meals or oven foods every so often.
Instagram makes it look like I always have the energy or creativity to make something from scratch… but in reality, the easiest way to go vegan and enjoy it is to keep things realistic. And find some super easy, vegan convenience foods you love.
Never run out of ideas for meals, even when you have 0 energy for cooking! Here are over 21 low effort vegan meals ideas for you to try now.
LAZY VEGAN MEALS:
1. Oven Pizza
You can’t go wrong with a cheeky oven pizza. Now we are lucky enough to have a variety of different brands catering for vegans including Chicago Town (pictured), Goodfellas, One Planet Pizza and White Rabbit as well as a multitude of supermarket own brands.
2. Kirsty’s Lentil Cottage Pie
A super quick, yet healthy microwave meal is this lentil cottage pie. Simply add your fav veggies to the side and you’ve got a meal in under 10 minutes with some proteins (lentils), carbs and green veg.
3. Veggie Soups
There are so many ‘accidentally vegan’ soups that you’d be surprised how many options there are. Including fridge and canned options.
4. Lazy Vegan Curry
The food really does live up to the name ‘lazy vegan’. Just chuck the contents of the bag on the hob in a frying pan, simmer for 5-7 minutes and you are done! Plus these are freezer friendly so you can keep them handy for when you have an expectedly long day at work.
Available in Thai Green Curry and Tikka Masala.
5. M&S No ‘Chicken Kiev’ and Oven Chips
Bang these M&S chicken kievs (or a similar alternative available in Tesco) in the oven with some ready to go oven chips and in around half an hour you have a meal. Leaving you free to go and do your chores or simply sit back, relax and let the oven do the work!
6. Sausage Rolls
Feeling lazy and missing Greggs vegan sausage rolls? Fear not!
There are a huge array of vegan sausage rolls on the market, from these Iceland own to Linda Mccartney to Naughty Vegan available in Morrisons and many more!
7. Nuggets and Chips
You may start to sense a theme that I do LOVE a good oven chip when I’m feeling like a lazy meal. The Morrisons own vegan ‘chicken’ nuggets are one of my GO-TO oven foods for both as a dinner with chips and in a wrap for a quick lunch.
8. M&S Plant Kitchen Tikka Masala
A real ready meal and one of my favourites is this M&S Tikka Masala. The best part of this is the soy chunks, and the fact you have a super tasty, hearty meal ready in minutes.
9. Waitrose Thai Curry
Another one of my favourites, maybe even my number 1 fav curry ready meal, is this Green Thai Curry Soya Pieces & Rice. The soy chunks honestly make this meal and the flavour is on point. Plus it isn’t too spicy which is great if, like me, you also don’t fare well with too much chilli in your food!
10. Plant Pioneers Tikka Masala
Sticking with the vegan curry theme, there is also this delicious Plant Pioneers Tikka with similar soy chunks to the Thai curry mentioned previously. An absolute winner to me and I urge you to try it too. The PP range, in my opinion, is honestly exquisite.
11. Pie and Gravy
Pie and mash or with fear of sounding like a broken record… oven chips, served with peas and caramelised onion gravy. I would definitely recommend a pie as part of a super filling and hearty meal.
12. Amy’s Kitchen
Pad Thai and Chinese Noodles
Two super easy, ready-meal vibe vegan meals. Sometimes I find these are to come by but worth grabbing if you see them.
13. Eat.Plant Thai Curry and Biryani
Eat.Plant has SO many vegan options available and the flavour is always jam-packed. As well as the meals above they also have spaghetti with aubergine ragu. If you fancy ordering some for yourself you can use my friend’s code to grab 20% off using the code ‘GEORGIA20’ at checkout on their website.
14. Linda McCartney Chicken Bucket
These ‘Chicken’ pieces are seriously good, you don’t even need to find them a side dish to pair up because these are a showstopper all by themselves.
15. Feed Me Vegan
Shepherds Pie
Can we just take a moment to appreciate that these meals are entirely plastic-free! My friend’s review of this meal is ‘the flavours and texture of this meal are SPOT ON!’. Lucy Watson’s pie uses lentils instead of mock meat and fluffy mash, but we suggest you add some veggies and of course smother it in gravy!
Chilli
Feed Me Vegan also do a chilli which Abby has used to create these vegan loaded nachos! Genius! and super quick for a main or as a sharing starter.
16. Leon – Mediterranean Mac and Cheese Bites, Mushroom Nuggets, and Buffalo Cauliflower Wings
Sometimes you just got to appreciate the side dishes. In the words of Laura (@noporkiepies) ‘Side dishes can become main dishes if you dream big, and buy enough… and I bought a LOT’. Laura combined a tonne of the @leonrestaurants delights to create the ultimate main dish made of side dishes.
17. Co-Op
Mac ‘n’ Cheese
Mac ‘n’ Cheese
Co-Op is smashing the vegan freezer food options. Including a Sweet Potato Curry, Mac n Cheez & Cauliflower Popcorn. Claire warns us that the curry doesn’t come with any rice though so be warned! As she almost got caught out.
18. Wasabi Pumpkin Katsu Curry
I don’t know about you but I do miss Wasabi so I am thankful they also have a vegan ready meal! It is on the pricy side for a ready meal, but justifiable when you think how much cheaper it is than katsu would be in a restaurant! Tabby says ‘the sauce was less creamy and more flavourful [vs YoSushi Pumpkin Katsu], and it had chunks of potato, carrot and onion in it which I absolutely LOVED! I would definitely purchase this again.’
19. Sausages, Gravy and Ready Mash
Such a simple yet delish dinner! Tesco Plant Chef mashed potato, Richmond meat-free sausages, broccoli and not forgetting some THICK gravy. And yes that mash is READY MADE MASH.
20. Vegan Duck Pancakes
Any of you who have come over to read this post from my Instagram, will not be surprised that the Linda McCartney vegan duck is making yet another appearance on my blog. And for good reason, because you can prep this lunch in just a few minutes.
To make this meal for 2 all you need is a Linda McCartney Hoisin Duck Pancake Meal Kit in the fridge section (RRP £5), a cucumber and a few spring onions! You can also get a bag of the vegan duck for sandwiches or salads in the freezer section without the meal kit for a cheaper alternative.
21. Hot Dogs Or Burgers
Maybe more of a summer lunch idea but I would still eat vegan hot dogs in the winter, how about you? Minimal cooking time as you just chuck the saussies or burger patties in the oven and grab your roll and fillings.
There are SO many vegan burgers available, including Fry’s Family, GoodLife, Beyond Meat. Honestly, I’d be here for ages if I started listing them all! My favourite vegan sausages are the Naked Glory, Richmond and Linda McCartney ones! Keep your sausages and rolls in the freezer for next time you’re cupboards are running low and you want a quick meal.
