This post is all about my top vegan English breakfast items, to give you inspiration for your next brunch. From the obvious and simple to going the extra mile. AND read to the end for 2 ninja tips for levelling up your brunch game!

If you follow my Instagram stories you will know by now that I am a huge brunch / cooked breakfast fan (especially for the hash browns!).
My 16 TOP Vegan Brunch Items:
The results are in no particular order, apart from hash browns are at number one because they are!
1. Hash browns
Save money and get supermarket own brand hash browns. Not only are they cheaper but I actually think they taste better too!
You could also swap your hash browns for potato smileys or toaster waffles if you fancy a change!
Or try making your hash browns from scratch! I use a recipe from ‘Corn On The Corb Blog’. You can find Sophie’s super simple recipe here!
2. Homemade Guacamole
Serves 1-2 portions – In a small bowl add half an avocado (mashed with a fork), 1 large tomato (finely diced), 1/4 red onion (finely diced) and optional: 70g sweetcorn, drained. Add in a pinch of salt and black pepper and a splash of lemon juice and optional: a handful of chopped fresh coriander. Mix everything together and serve.
3. Veggie sausages
Is it really an English Breakfast without a couple of sausages?
My top recommendations are Linda McCartney (either the red pepper and chorizo or the original flavour) or Heck Veggie Breakfast sausages.
4. Don’t skimp on the sauces
Try Ketchup, Chilli Mayo or sweet chilli sauce.
5. Hummus – Trust me
Or even better than sauces add a dollop of hummus on the side. Why not? I even serve hummus on top of my taco mix! Recipe for my bean taco mix here!
6. Orange or Apple Juice
7. Tea or Coffee
Is it really the morning if you don’t grab yourself a cup of your favourite hot drink?!
You guys will know if you have had a browse over my all time TOP recommendations that I am in love with my Nespresso Coffee Machine. It really makes me feel like I’m out in a cafe every-time I use it.
I got mine with the milk frother which is a GAME CHANGER!
For a more affordable option have a look for an electric handheld whisk. I have used these in the past, before I had my espresso machine, to make super foamy milk for coffee and hot chocolates.

8. Toast and Naturli butter
The BEST vegan butter on the market, in my opinion. Even my nonvegan friend said it tastes like dairy butter!

Please note this spread is not suitable for nut allergy sufferers.
7. Garlicky mushrooms with spinach and red onion
1. Simply add sliced mushrooms and chopped red onion to a frying pan with a drizzle of oil and fry till onions are browning and onions start to soften.
2. Add in 1-2 minced garlic cloves and a dash of salt and pepper and a couple of large handfuls of spinach.
3. Cook till the spinach has wilted.
4. Serve as a side dish to a full cooked breakfast or on top of toast with some tomatoes as a hero dish.
10. Baked beans
Nothing more simple that chucking in some baked beans on the hob to cook a couple of minutes before you serve!

11. Grilled tomatoes
Slice a couple of big tomatoes in half then chuck them in your oven or fry them up till they soften a little. A super simple side for your vegan brunch.
12. Spicey fried potatoes
Roughly chop your white potatoes into cubes. Boil them until they are soft but not completely mashed. drain them and add then to a frying pan of hot oil and fry in paprika, cumin and chilli powder till crispy and golden.
13. Pesto on baked portobello mushrooms
Bake your mushrooms in the oven for 12-15 minutes with a drizzle of oil and sprinkle of minced garlic, salt and black pepper.
Then top with your fav vegan pesto!
14. Courgette/Zucchini fritters

An easy way to sneak in some veg into your breakfast.
AND you can use the leftovers for a wrap or burger bun filling for other meals later in the week.
15. Tofu scramble
You can make your own tofu scramble pretty easily with only a few simple ingredients.
Here is a simple recipe from BBC Good Food for you to check out if you want to make it from scratch.

16. Sweet potato toast
Such a unique idea if you want to mix things up or if you are gluten free!
You can make your sweet pot toast in the toaster or in the oven. Here is a blog post from another food blogger you can check out for more info on how to make it!
Or you could even serve the sweet potato toast as your hero dish with toppings such as yogurt and berries, banana, chopped nuts and agave nectar or smashed avocado and sliced tomatoes!
A couple TOP TIPS for cooking the BEST BRUNCH:
Put your plates in the oven for one minute just before serving to heat them up!
This will keep your food piping hot for longer AND allow you extra time to take those food photos you will definitely want to take when you have made your ultimate vegan cooked breakfast.
Fry your hash browns!
To get the CRISPIEST hash browns, fry them for 2 minutes on each side right before serving after you take them out the oven! (S/O to my Instagram follower @kentish_vegan for this ninja hack).
Sometimes I swear I make vegan brunch so often I should start a vegan brunch café! Then I could have hash browns every day too!
