So you need some inspiration for some vegan lunch ideas? Whether you are doing Veganuary for the 1st for 5th time, or have been vegan for a number of years, coming up with tasty, easy vegan lunch ideas can be tricky. Here are 25 vegan lunch ideas you can give a try this Veganuary 2021.
While the majority of people are able to work from home at least some days, I thought I’d give you some ideas for lunches you can make in your lunch hour, that won’t eat too much into your break.
My Instagram makes it look like I eat a different recipe every meal… but in reality, the easiest way to go vegan and enjoy it is to find meals you LOVE and make them on repeat!

25 VEGAN LUNCH IDEAS:
1. Tomatoes on Toast/ Bruschetta Style:
Finely chop 150-200g tomato, 1/2 small finely red onion, 1 garlic clove (minced), 15ml balsamic vinegar, 1/2 tsp lemon juice, good pinch of salt and pepper. Mix in a bowl and leave for 5-10 mins then add to toast. Would also be delish with some smashed avo!
2. Vegan Hoisin Duck Sandwich

You guys know how much I LOVE @lindamccartneyfoods duck fried in hoisin and soy sauce served in a sandwich, with lettuce for extra crunch. As seen 👆🏼 in the picture of this post! Today I also served mine with some garlic and soy sauce fried green veggies.
3. Wrap or Pitta Pizza
Top a tortilla wrap with tomato purée, add grated vegan cheese and your fav toppings and oven for 8-10 mins.
4. Vegan Chickpea ‘Tuna’ Mayo
I got my recipe for this from @sovegan but there will be loads of vegan recipes online for creating that vegan ‘fishy’ flavour with mashed chickpeas and vegan mayo. Would be perfect on a baked potato, salad or sandwich!
5. Root Veg and Coconut Soup
I have a recipe on my website but you can experiment with any root veggies you have at home! Maybe even add some cayenne pepper if you like a spicy kick!
6. Baked Potato and Beans
Pop the pot in the oven an hour or so before you lunch break OR you can even microwave your pot for approx 10 mins (not as crispy but still tasty!). I recommend using a fork to punch in a few holes, then coating the pot in a little oil and salt (for flavour and to stop the potato drying out!) before cooking. Serve with some baked beans and grate vegan cheese on top.
7. Falafel Pittas
The best falafel recipe I’ve ever found is by @theMediterraneandish (check out the blog for the recipe or DM for the recipe URL if you can’t find it). When I made these my sister and our friend said they were the best falafel they have ever had! 😍 You can prep the mix on the weekend and then fry the falafel in just a few mins to cook. Serve with salad, hummus, cucumber, tomatoes in pitta bread. Or pre-fry them and have them cold in a packed lunch. Served hot is preferable but I’ve had my leftovers cold the next day and it was still delish!
8. Toasted Chickpea and Hummus on Toast or Salad
Drain a tin of chickpeas and place on a baking tray. Add a drizzle of oil, sprinkle of paprika, cumin, salt and pepper and bake for ~10 mins at about 160 degrees. Toss them over half way through baking and take out when they are crispy on the outside yet still soft on the inside. Serve in a salad with tofu, lettuce, tomato, red onion, and avo and top with a tahini or lemony dressing or serve as a toast topping over guac or hummus.

Pasta is always a good lunch option, hot or cold. You could even get some vegan ravioli which will only take a couple mins to boil which will speed up your cooking time even more.
