This root vegetable wellington recipe is perfect for autumn because it’s tasty, cosy and you can make it with almost any root veggies! Serves best with fresh vegetables, roast potatoes and your favourite accidentally vegan gravy.

Vegetable Wellington Recipe:
Ingredients:
- 2 sheets puff pastry
- 1 box of stuffing (I recommend Sage and Onion flavour)
- 1 butternut squash
- 1-2 bell peppers
- 1 red onion
- Flavourless oil
- Dairy-free milk
- Salt and pepper (to taste)
Method:
1. Cut veg into chunks (not too small as they will reduce when roasted) and roast until tender, with oil and seasoning.
2. Soak the stuffing with boiling water – as per box instructions.
3. Layout a sheet of puff pastry on a baking tray and add the stuffing. Cover the pastry evenly, with a 2cm gap from each side.
4. Add all the veg onto the stuffing.
5. Cover filling with the 2nd sheet of puff pastry. Seal up edges with oil.
6. Cut the edges of the pastry to get a neat line around the wellington. Use a fork to press in small divets around the edge where the pastry meets to ensure there is no leakage. Finally, ‘egg wash’ with dairy-free milk.
7. Feel free to use any excess pastry to decorate the top. Here I decided to do a ‘desk of cards’ theme but I also like to make little hearts or leaves and add them using the DF milk.
8. Poke in a few small holes/ cuts in the top of the upper sheet to let the air out during baking.
9. Cook as per the instructions for the pastry/ until golden.
Serving Suggestion
Serve as part of a vegan roast or as is with some veggies. I would also recommend adding a decent serving of vegan gravy. The wellington soaks up the juicy gravy brilliantly.
My fav is the Bisto caramelised onion gravy made with sautéed chopped red onions.
