Every summer, I batch make this vegan slaw because it keeps in the fridge for days and is a perfect side to most summer meals. Then I can just grab a portion to serve with almost every lunch that week!
I love the combination of sweet apple and carrots with sour vinegar and creamy vegan mayonnaise. It’s so simple yet so tasty!

A few years ago vegan mayo used to be runny, thin and very vinegary but now we have many options for thick, creamy vegan mayo. Some of our favourites are Follow Your Heart, Hellman’s, Rubies in the Rubble, or Bonsan.

Easy Vegan Coleslaw
Equipment
- Grater
Ingredients
- ¼ red cabbage finely sliced
- 3 large carrots grated
- 1 whole grated apple inc skin
- 4 tbsp vegan mayonnaise
- 1 tbsp apple cider vinegar or lemon juice
- salt and pepper to taste
Instructions
- Shred the red cabbage by finely slicing it. Add to a large mixing bowl.
- Use a grater to grate the carrots and apple. Use a clean tea towel to squeeze the excess liquid from the carrots and apple. Add the strained carrots and apple to cabbage in the bowl.
- Add apple cider vinegar, vegan mayo and salt and pepper to the bowl, and mix well to combine.
- Add salt and pepper, to taste. If you prefer a creamier coleslaw then add 1-2 further tbsp of vegan mayonnaise.
