This post is a vegan cake recipe for a super moist and fluffy carrot cake with rich Biscoff buttercream. Made into a giant biscuit cake!
My wonderful pal Mary, of @a_la_food on Instagram, has given me permission to share her carrot cake with Biscoff icing recipe and let me tell you it is a GOODUN. I love how Mary created it to look like a giant Biscoff biscuit!
Carrot Cake Recipe
Ingredients:
- 280ml plant milk
- 1-2tbsp flax or chia seed
- 1 tsp cider vinegar (use lemon juice or wine vinegar if you need to sub)
- 280ml carrots grated (4-5)
- 125ml flavourless oil (100g)
- 200g caster sugar (180g if using apple/pear)
- 4 tbsp Biscoff spread (75g or more)
- 300g plain flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- 1.5 tsp ginger
- OPTIONAL: 1 apple or pear steamed/blended =60-70g.
Method:
1. Let plant milk come to room temp and mix with flax and vinegar and set aside.
2. OPTIONAL: cut apple or pear into quarters and steam for 10 mins.
3. While waiting, grate the carrots.
4. Once apple/pear is done, blend or mash to smooth consistency and leave too cool.
5. Beat oil and sugar together for a min or two, then add Biscoff spread.
6. Slowly add the plant milk mixture.
7. Add all dry ingredients.
8. OPTIONAL: Add carrots and apple/pear sauce.
9. Pour in to cake tin. Bake at 175 C fan for about 25 to 35 mins, (keep checking with a fork till it comes out clean – it may take longer to bake depending on batter thickness).
Biscoff Buttercream
Ingredients:
- 30g baking block (eg. stork)
- 40g vegan margarine
- 200g icing sugar
- 40g biscoff spread
- 1/2 tsp cinnamon
- 2 (+) tbsp plant milk
Method:
1. Bring all ingredients to room temperature.
2. Beat the fats and sugar for a couple of minutes until well combined and gone a bit pale, it’s ok to be a little stiff.
3. Add the cinnamon and slowly add the Biscoff spread.
4. Mix in the plant milk to loosen up. If it needs more liquid, slowly add until desired creaminess.
