This post is about one of my FAV lunches, using the Linda McCartney vegan hoisin duck.
This sandwich is perfect for a quick and tasty lunch idea. A great work from home lunch idea.
You can even make the duck filling the night before and pop it in the fridge to assemble into a sandwich in the morning to take as a packed lunch for school or work.
You can also try out the hoisin duck on a crunchy salad, which is super tasty too.

Ingredients:
- Vegan hoisin duck (I recommend Linda McCartney duck, from the freezer section of most large supermarkets)
- Flavourless oil, such as sunflower
- Hoisin sauce
- Bread
- Optional: Lettuce and/or cucumber ( I do love the added crunch!)
Method:
1. Fry the vegan duck (I use 1/4 of the bag of Linda McCartney duck) in 1 tbsp oil for about 5 minutes on medium-high heat, stirring often.
2. Keep stirring as it will burn quickly and it helps to get the duck evenly crispy.
3. Add 3 tbsp of hoisin sauce and stir, stir, stir!
4. After one further minute of frying, you should be ready to compose your wonderful sandwich. Add any optional crunchy veg.
(You can add some vegan butter too, but it’s not essential as the sauce keeps it from being too dry.)
