This post is a green veggie fritters recipe with courgette and pea as a base, plus serving ideas for brunch or main meals.
A perfect recipe for people who love to jazz up their green veggies and eat a lot of fresh food but without compromising on delicious flavours.
Veggie Fritters Recipe:
Ingredients:
(Makes 6)
- 1-2 courgettes, grated and dried well using kitchen paper
- 3/4 cup thawed peas (press out the liquid)
- 1 brown onion, finely diced
- 1-2 cloves garlic, minced
- 2 tbsp lemon juice
- Salt and pepper, to taste
- Approx. 1/3 cup plain flour
- Approx. 3/4 cup oats
Method:
1. Add all ingredients apart from the flour and oats to a mixing bowl and combine well.
2. Add the flour and half the oats and stir to combine. Keep adding heaped tablespoons of oats and mixing, till the constancy of the mix becomes dry enough to not stick to the sides of your bowl and can hold its shape in patties. (You may need to need to add more flour and oats than listed, as it will depend on how wet the veg are. Just keep going till you get a mix that can easily form patties in your hands without falling apart).
3. Make ‘burger patty’ shapes and fry on each side for ~5 mins on medium heat in a frying pan with a little veg oil.
Serving Ideas:
In this post, I served my fritters with crispy kale, tofu, avocado and homemade pesto hummus.
You can serve these as part of a lunch or cooked breakfast or even as a burger style patty.
You could also make them much thinner to make them more of a classic thin and crispy fritter but I like them more of a chunkier thickness, but feel free to play around with this to suit your preference.
