These vegan tacos are a staple in my families weekly food plan! They make the little person inside me dance with happiness and I know you will love them because not only do they taste insane, they are so easy to make with the kit I recommend.

The instructions in this blog post are not representative of a traditional recipe for Mexican Tacos. This is only claiming to be instructions on how we (Libby and her family) make our vegan tacos using store-bought, ready-to-use spice mixes, as I get a lot of questions about how I make these on Instagram. This is a summary of the meal and how to make it using ingredients commonly found in western cupboards and is not a traditional Mexican recipe.
I am a huge fan of Mexican cooking, for its rich, spicy flavours and delicious, fresh and colourful foods. I have been lucky enough to have visited some of Central America before the pandemic and I very much enjoy incorporating Mexican flavours and Mexican inspired recipes into my weekly meals.
This blog post has been highly requested on my food Instagram and I would love it if you try it out. However, as this is not a traditional Mexican dish, there are lots of other food bloggers with plant-based recipes for Mexican meals so I urge you to give these a try as well. Hopefully, this can be a stepping stone to you discovering a love for Mexican cuisines.
My Recommended Taco Kit (AFFORDABLE!)
I recommend the Tesco taco kit (RRP £1.85). Serves 4 (12 shells).
The shells and the seasoning mix are my FAV but similar alternatives will work if you can’t get down to your local Tesco store.
How To Make These Vegan Tacos:
Ingredients:
(Serves 3-4 people)
- 3-4 taco shells per person
For the filling:
- 1 large red onion, chopped
- 2 tbsp flavourless oil
- 1-2 bell peppers, chopped
- 1 can chopped tomatoes
- 1 can mixed taco beans in spicy sauce – add the sauce, do not drain it away! (I use these ones from Tesco)
- 1 can cannellini beans (drained and rinsed)
- 1 taco seasoning packet
For the guacamole:
- 1 large (or 2 medium) ripe avocado, mashed with a fork
- 1 tbsp lemon juice
- Salt and Pepper to taste
- 1 large tomato or approximately 6 cherry tomatoes, chopped into small pieces
- 1/4 red onion, very finely chopped
Optional Toppings:
- Hummus
- Vegan cheese
- Salsa
Method:
1. Heat 1 tbsp flavourless oil in a large wok. Add the chopped onion and bell peppers and fry for a few minutes on medium heat to soften.
2. Add the chopped tomatoes, can of mixed taco beans, and a can of drained cannellini beans.
3. Stir in a packet of taco seasoning and simmer for 10 minutes, stirring every few minutes to stop the mix sticking to the bottom of the pan.
4. While your beans simmer, make the guacamole. Simply mash the avocado with a fork in a bowl. Then mix in the salt, pepper and lemon juice, and then add the very finely chopped tomato and red onion and mix in well.
5. Spread out your taco shells on a microwave-safe plate and then microwave for about 20-30 seconds on 800.
6. Serve by scooping a couple of heaped tbsp bean mix into the shells topped with the guacamole, salsa and any other toppings you have chosen.
Serving Suggestion:
We serve our vegan tacos with homemade hummus and salsa (not homemade but if you do create your own salsa please tag me on Instagram or send me a message to let me know how it tasted!)
